The Palette Café by Viking is open Tuesday through Sunday 10 am - 2 pm.

MMA Executive Chef Emily Hines Burgess, also Food Editor of Mississippi Magazine, has created a modern café menu with a Southern flair that is guaranteed to please even the most discriminating palates. Combining fresh, local ingredients with international influences, Burgess offers a selection of soups, salads, sandwiches, paninis and so much more that will bring customers to The Palette Café by Viking again and again. Burgess offers daily special selections, as well as breakfast breads, snacks, cup cakes and other enticing treats for Museum visitors.

Salads - $8.00
Southern Sideboard Salad - Crunchy romaine lettuce tossed with heirloom cherry tomatoes, thinly sliced red onions, peppered Applewood smoked bacon, black-eyed peas, fried okra and fresh corn. Served with crispy cornbread croutons and comeback dressing on the side.
The Palette Cafe Chicken Salad with Fresh Berries - Fresh chicken, grapes, spiced pecans, celery, and Grannie Smith apples lightly tossed with homemade mayonnaise. Served on Romaine lettuce leaves with a bowl of fresh berries sprinkled with lime juice and powered sugar on the side.
Mississippi Grilled Salad - Grilled Romaine and Radicchio lettuces tossed with grilled chicken, peppered Applewood smoked bacon, dried cranberries, toasted almonds and a wedge of brie with grilled French brad croutons. Comeback dressing or lemon-caper vinaigrette served on the side.
Deep South Greek Salad - Mixed fresh greens with cucumbers, kalamata olives, tomatoes, artichoke hearts, pepperocini peppers, thinly sliced red onions, feta cheese all tossed in our Greek vinaigrette. Warm pita bread and yogurt sauce on the side.

The Plantation Sandwich - Southern cornbread split and layered with smoked turkey and asparagus, more cornbread and topped with hollandaise sauce and crumbled bacon.
The White Palette Sandwich - Grilled chicken topped with our piquant white barbeque sauce, tangy slaw and a smidgen of Alabama goat cheese. Served on toasted bread.
The Palette Cafe Chicken Salad - Our own chicken salad served on toasted sourdough or wheat berry bread with crispy Romaine lettuce.
The Grilled Vegetable Panini - Grilled Vegetables served on warm foccacia bread with homemade curry sauce, fresh mozzarella and Romanice lettuce.
The Toasted Cuban Panini - Spicy marinated and grilled pork tenderloin slices topped with black forest ham, grilled onions, pickles, zesty Cuban Aioli and melted Havarti cheese. Served warm on French Bread.
The Roast Beef Sandwich - Grilled roast beef with provolone cheese, lettuce, tomato, and tangy sauce. Served on warm French Bread.

The History of the Palette Café
Formerly known as The Palette and located in MMA’s former home in the Mississippi Arts Center, the restaurant originally opened September 11, 1979. A modest lunch was available Tuesday through Friday and was served by volunteer waitresses. The original Palette Planning Committee members included Mrs. Richard L. Redmont, Mrs. Wilbur H. Knight, Mrs. Robert M. Hearin, Mrs. Battle M. Barksdale, Mrs. Gerald Ross Pascal, and Mrs. Noel C. Womack, Jr., all of whom faithfully waitressed for many years. The idea to name the restaurant “The Palette” originated when Mrs. Redmont presented the Palette Manager a set of small multi-colored paper palettes on which to print the menus. Since the restaurant’s inception, literally hundreds of individuals have served as waitresses and cashiers, or have provided background piano music.
